Gourmet Academy Popcorn

Gourmet Popcorn

This recipe boasts as few as five ingredients.

All that is required is patience and perfect timing.

Follow the instructions as directed.

You will be rewarded with popcorn that retains its freshness and texture for the whole length of the movie.

I reserve this recipe for movies I know will be worth a long lasting bowl of popcorn a whole group can enjoy without it disappearing before the opening credits.

The contrasting ingredients combine to provide a satisfying feeling to be shared in a group.

From the tool shed:

Brass, stainless steel, or other heavy metal pot with a see through, removable lid.
Thin pots, such as aluminum, conduct heat unevenly and will not work well with this recipe.

One stick organic butter

Popcorn kernels

Grated Parmesan cheese, 4 heaping tablespoons per cup of popcorn

Sea Salt

Hot Pepper Flakes (alternate: cayenne pepper)

Two oven mitts (or something to grab the cover without burning your hands or starting a fire.)

Serving bowl

And into the fire:

1. Place the pot on the largest of the ranges and set to the lowest flame setting.

2. Place one stick of organic butter in the center of the pot.

3. Pour one to two cups of popcorn kernels, depending on the amount of diners. Every cup serves up to three people, and the maximum is two cups.

4. Cover, and allow butter to melt slowly into layer of kernels.

5. Continue cooking kernels in boiling butter until they begin to pop.

6. Once popped corn reaches halfway up the pot and begins rising steadily rather than popping chaotically:

       - Remove lid and generously sprinkle sea salt.

       - Cover, shake, repeat two more times.

7. Allow contents to continue cooking on lowest flame setting.

8. Lift lid with oven mitt and sprinkle four heaping tablespoons of Parmesan cheese with opposite hand slowly onto mixture.
Be sure to replace lid between each tablespoon to reduce unnecessary risks.

9. Replace lid and allow to cook, shaking contents frequently (use the oven mitts).

10. When popping has stopped completely, turn heat off and allow to set with lid on.

11. Sprinkle two to three teaspoons of hot pepper flakes or cayenne pepper.

12. Shake gently and pour contents into a serving bowl.

Bon Appetit!

Pizza Bagels

Pizza Bagels This old time favorite is the perfect snack for children and adults alike. These simple twists will burst with flavor on your taste buds. I'm a huge fan of Muenster cheese, mostly because of it's smooth texture and mild flavor, but I recommend trying different types of sliced cheeses, as long as they are sliced thin. Ingredients: Thinly sliced cheese, preferably Muenster. 3 slices Bagel, frozen or fresh, sliced in half Roasted red pepper, sliced into 1" (one inch) strips one centimeter wide. 1/4 cup Directions: For frozen bagels, defrost in toaster at 150 - 175 degrees for five to seven minutes. Preheat oven to 425 degrees. For toaster ovens, no preheat is necessary. Place roasted red pepper slices on both bagel halves so that each half is completely covered. Break up slices of cheeses into six or more smaller pieces. The smaller the pieces of cheese, the better the melting process. Layer the cheese on top of the bagel with all three sli...

Omelettes for Egg Haters

Omelettes I personally cannot stand the taste of eggs, whether in omelettes, scrambled, mixed with other ingredients, or any other way. I can tolerate hard boiled eggs, but I have to be pretty hungry for that. I came up with a solution that anybody can prepare, and the results are so delicious, you will be shocked at how delicious they come out. This is especially valuable for parents who have a hard time getting their children to eat breakfast. Ingredients: 4 organic, large eggs 3 tablespoons honey 1/2 teaspoon hot sesame oil 1 1/2 teaspoons green habanero sauce 1/2 teaspoon sea salt 1/2 teaspoon freshly ground black pepper 1 pat organic butter 1 tablespoon cream or whole milk 4 slices deli cheese of your choice (optional) Diced vegetables of your choice (optional) 2 heaping tablespoons organic unbleached all purpose flour (optional) Directions: Warm a large non-stick frying pan on lowest heat setting of medium-sized range. Add butter and allow to ...

Beef & Tempeh Vegetable Stir Fry

Introduction This is a really great, fast, and easy-to-prepare dish for feeding a small group of children with a delicious and extremely nutritious meal that can keep them energized and nourished throughout the day as a lunch meal or satisfied through the night when offered during dinner time. Personally, I believe it's best to eat small amounts continuously throughout the morning and then eat a well-rounded, large meal at the mid-point between when you wake and sleep. In other words, it would be snacking or mini-breakfasts, then dinner-sized lunch, then later an hour or two before bedtime, a dessert-styled breakfast item, such as an omelette or crepe. To be honest, omelettes are really not a great starter for the day, or eggs in any form for that matter.  Needless to say, your significant other, attending to business matters, depending on you for domestic matters, cheating on your agreed upon diet every chance they get, and not interested in any meals or foods with the...
